Coco- Walnut Banana Bread

When it comes to food, we’re ‘maximalists’. Can we order the pizza with nine different toppings? How many condiments can we layer on this sandwich? And when it comes to how we like banana bread, things are no different. In this recipe, we kept things pretty classic, but added a little bit of extra crunch and fun melty pops of flavour. For brain health, walnuts. For emotional health, chocolate chips. 😉 Feel free to swap out with nuts of your choice or try any type of chocolate! Or, keep it simple, and stick with just bananas. 


3 ripe bananas 
1.5 cups all-purpose flour
1 tsp salt
1 cup brown sugar (brown sugar adds moisture, but white sugar will work as well)
1 tsp baking soda
1 egg
1/4 cup melted butter
1/2 cup chopped walnuts
1/2 cup chocolate chips



1. Grease a medium sized-loaf pan
2. Preheat oven to 165 degrees
3. Mash up your bananas in a large mixing bowl
4. Add egg, melted butter and sugar to the bowl with the bananas and combine
5. In a separate bowl, mix flour and baking soda
6. Stir together with wet ingredients until batter is just mixed (don’t overmix)
7. Fold in salt, chocolate chips, and walnuts
8. Pour the batter into the loaf pan and place in the middle rack of the preheated oven
9. Bake for about an hour. Check the middle of your banana bread with a toothpick. When the toothpick comes out clean, voila! Your bread is ready. 😊 
10. Remove loaf from pan as soon as it comes out, and cool on a baking rack
11. Store leftovers in airtight container or tightly wrapped plastic. Enjoy!
