Fried Rice Recipe

Ingredients:

Boneless, skinless chicken thigh 250g
Frozen peas, corn & carrots 1 cup
Eggs  6
Uncooked rice 1 cup
Spring onion 1 bunch
Roasted sesame seeds 2 tbsp
LaoGanMa spicy sauce (optional) 4 tbsp

Step 1. Cook the rice according to the instruction on the package and leave it in the fridge overnight. It’s a key step as we need the rice to be cold and dry for a good fried rice.
Step 2. Finely slice the spring onions, beat the eggs, dice the chicken, and microwave the frozen vegetables for 1.5 mins.
Step 3. Add cooking oil to a wok, heat up till it starts fuming a bit.
Step 4. Add the eggs and scramble them till they are solid.
Step 5. Add the diced chicken and stir fry until it’s thoroughly cooked.
Step 6. Add the cooked rice, microwaved vegetables, some sliced spring onions, and salt to taste. You can also add some LaoGanMa if you like. Remember to mix everything well and cook for another minute or two.
Step 7. Scoop it out into portions and serve with more fresh spring onions and roasted sesame seeds on the top.
